An SL4 run in Dark Souls without Pyromancy is the perfect challenge. Pyro is too much of a crutch.

Not when elemental weapons are a thing, no. Unless you try it with a regular scaling weapons a no-leveling run won't change much from one class to another
Armor and a big fucking sword
I made a Warrior and bumped up the Endurance until I was SL10 so I could wear more aesthetic armor with a light roll. Harder than my SL1 Pyro and a lot better variety with weapons and armor. Had a lot fun with this one, got to NG+4 or so.

Pure pyro (no using weapons, only attacking with pyromancies was actually tough.
Punchy dude was piss easy though in 2, your mobility means it's hard to get hit, and your fists hit like trucks, and that's before you get Vanq seal or Bone Fists.
Haven't tried pure pyro in 2 yet
