That's not exactly what happened. Vanitas has nothing to do with Riku, but it's the other way around. Sora helping Ven out in the beginning of BbS when he's a newborn is why Vanitas looks like Sora, Sora helping Ven out the second time at the end of BbS is why Roxas looks like Ven.

Nah he's also a bully. For the first couple of years of his life he was miserable because he was missing his other half. Whenever Vanitas feels strong negative emotions, he creates monsters. In his anger, he'd kill them, which would hurt him and make him feel worse. It was a cycle, and the bad guy convinced him the only way to escape was to bully the shit out of his other half.
