Multiple reasons.
Multipleplayer games usually require internet connection. Maybe you can't get internet right now or your connection is shit. Maybe you don't want to have to constantly dowload the latest patch just to play.
Also, multiplayer games are always mercy to flavor of the month. You need multiple players to play. If there's no one to play with, you just can't play the game. Unlike single player games, where you can play old games at any time you HAVE to play the latest one.
Multiplayer games can be pretty repetitive. Single player brings in better set pieces, puzzles and other things that can't be done in multiplayer.
You don't want to deal with people right now, or at all. You just want to chill and play a game.
The game is fun but you're not competitive enough to do multiplayer and be good at it. You don't have the time to sit down and git gud by playing the game for 5 hours after school like 14 year olds, you're an adult with responsibilities.
The multiplayer scene is prone to being very strict and staying to "the meta" to the point where it feels like you're replaying a single player level over and over again. Might as well just do single player and do different levels.
The multiplayer is shit and feels tacked on.
The multiplayer doesn't even fucking work because of shitty netcode or the servers are down or whatever.
Because you know that always-on DRM was a stupid idea and having a game where multiplayer is the only way to play is basically the same thing. No internet? No game.
