The confusion stems from them fucking up the localization in 13-2 where they called hearts souls. Then in LR when they are clearly two different things they still call everything a soul.
The soul is the raw material for making a living thing. B can make, take, and absorb these things as he please. That he makes a replacement for humanity in Ereshkiga is proof of this.
The heart is what gives a human humanity. Etro made the heart to give to humans after B when to sleep. The heart acts like a cage to protect souls, that's why B has trouble getting souls in LR, because the heart is in the way. He finds that out when he tries to take Serah's soul and accidently makes Lumina and so he changes the plan to making Lightning his new Etro so she can do it for him.

FF13 translation is kinda poor in terms of lore of 13-2 and LR.
They call everything Soul in localization due to the whole Maker/God bullshit (they never say Maker in Jap btw, it's just "Kami" [God] as in THE God) and to distance themselves from Kingdom Hearts where you've got hearts, souls and shit.
But in 13-2 and LR soul and heart are two entirely different things and work pretty much the same as in Kingdom Hearts.
A soul is a soul, the heart is the personality/emotions.

If its your first playthrough you might want to wait till day 7 for Noel. It will be a tougher fight but you'll get a better weapon. The dead dunes boss will also get stronger on day 7 and snow gets stronger on day7 and again on day 11. The wildlands boss is always the same strength.
