HP/"health"/whatever is a bad abstraction.
But let's suppose it primarily represents the blood loss for example. As the fat tissue also has to be supplied with oxygen, a fat person would have more blood and I suppose this would translate into being able to lose more blood without being incapacitated.
In addition, while fat offers negligible resistance against penetration, it could be that a weapon that manages to get 2cm of the blade inside the opponent's body misses the internal organs because it only reaches that fat tissue.
But the real answer remains unchanged. "HP" doesn't really represent anything concrete, it's a completely game-y mechanic and the values are all arbitrarily decided.

Well, if you don't mind a bit of spreadsheets, the ideal system (certainly in terms of realism and I'd argue it makes for more interesting gameplay as well) of course is the one used by Dwarf Fortress, UnReal World and other such games: Damage to individual organs/body parts (with effects determined by the body part in question) and stuff like blood loss and hypothermia handled separately.
Or at least a "something-in-between" system like the one in Dominions (units have a displayed HP but the damage is locational and they can receive permanent injuries like loss of limbs, affecting their further performance)
