Because of medium differences.
A game needs at least some kind of interactivity, and most interactive bits don't lend well to cinematic presentation. On the other hand, movies can't showcase the interactivity of vidya, and must make concessions to that end in order to fit the material to the screen.
Every once in a while we'll get something like the Phoenix Wright movie or Postal that captures the feeling of the source material very well, but for the most part sacrifices must be made.

They're very well trained, but lack a certain natural charisma most people like in movie actors and is especially jarring when you compare American film stars of the earlier eras of film to the British stars of modern eras of TV and film. They're essentially to film what Mexicans are to entry-level jobs. Technically better and cheaper, but something's just wrong.

That is true when it comes to something that has heavy story-gameplay integration, like Metal Gear Solid with Psycho Mantis for example. Even so, that little bit could be changed or even cut since Mantis is (while cool and a fan favorite) not particularly important to the plot, without changing things in the story besides. What I mean is when changes are made for no reason. Look at the first Silent Hill movie: It does a decent enough job at scenery and design direction, and even good camerawork, but it has baffling changes such as making Harry a woman and giving the character a still living spouse, various name changes, changing the cult into Christians, making Alessa malevolent, and putting in Silent Hill 2 monsters into the Silent Hill 1 adaptation. Certain things can be explained away as laziness and the fact that Gans wanted to adapt 2 but felt he needed to explain how the town was fucked. Still, a good deal of changes can't be easily explained by just that. And there are plenty of movies that are worse off in this regard. I just can't fathom why some of these things would be changed.
