SH3 looks amazing but the environments are much lower poly compared to DOA5 and have less effects. Not to mention SH3 has mostly static levels while DOA5's are more dynamic. I gotta give credit where credit is due though; there's no denying SH3 looks amazing considering the hardware. Team Silent were fucking wizards. But DOA5's environments are much better from a technical (but not artistic) standpoint.
