Have never played a souls game, and don't own a PS4. Which one would you suggest first? Not too worried about story if that is necessary for sequels, mostly gameplay

They're all worth playing. Dark or Demons is a fine place to start. Dark Souls 2 is also great, I'd recommend the Scholar of the First Sin edition.

Assuming you own everything on earth other than a PS4, play Demon's Souls on PS3, then Dark Souls 1 and 2 on PC.
Dark Souls II is often cited as bad, but in reality it was just disappointing. Furthermore, the Scholar of The First Sin edition contains all the DLC, which is well known for being better than the actual game. The 3 DLCs are Dark Souls 1-tier.

Anyone who persisted to play Dark Souls II until the DLC came out knows this. For new players it's effectively a very good game now.
Dark Souls first. IMO best ambiance for the experience, just let yourself get lost in it. If you like it then move on to Dark souls II (I'd say bloodborne, but you don't have ps4) then after DSII (Scholar of first sins edition) when you have convinced yourself you are good at souls games. Play demon souls and be brought back to reality.
Using this order you hey the most out of the games.
