Anyone have a recommendation on what to do? I just got to hr7 the other day and I haven't done any multiplayer. I'm confident in my ability to solo HBG it but I was wondering what everyone else did by this point.

I'd recommend you at least play a little online so you can get used to it. Eventually you're going to get fucked for using ranged weapons against things like G-rank Joe and the new Gravios attacks.
As a good HBG user, you're probably going to be welcome on most any team.

Get the seregios hunting horn if you have a decent armor with earplugs. it's a monster

Ammo isn't nearly the problem people make it out to be.
You can buy you shots from the shops and carry combines to make more during a hunt.
In the case of Normal lvl 2, it's as easy as buying Huskberries and Needleberries from the shop.
If you're doing Pierce than I reccomend buying a shitload of Bird Wyvern Fangs from the Wycoon. He doesn't always have it so get it while you can. Pierce lvl 1 can be made using Latchberries and Huskberries so just multiply your Latchberries with the Wycoon.
Now if it's a larger monster than I would just bring a stack of pierce lvl 3 with no combines for it, mainly because it requires pin tuna and I don't like fishing.

As a CB main myself, I just "don't get" Seregios. He moves so erratically, and I must say naturally and well animated too, so I just can't read his patters, except some basic attacks like tail sweep.

What does bushido style do?

You just roll into an enemy attack with huge iframe window, and if it connects you're given invincibility for the rest of the attack animation, like when blocking, and you get access to some damage boost, or a unique super attack etc.

The biggest problem currently with MHX is its easy. Any MH vet regardless of the last game played can tell you its easy as fucking balls, the devs designed it that way so you can "experiment" but just made things worse.

Not really. All you need to do is cut the cucumber lengthwise and he goes down as easy as most other monsters.

The downside of Bushido is you can only equip one Art (Super) and you lose some of your weapon mechanics or the bigger combos

The dodge in bushido stance doesn't have any more iframes than usual during the dodging phase. You only get the extended dodge when you would have already dodged the attack.

The thing has no actual downsides outside of the annoying bug shooting and maybe the fact that growing the bug is a bitch.
