Even when 7 and 8 were coming out, folks were debating on whether or not there should be voice acting, or just text. I think that's part of it, you have your own voice/attitude for the characters in your head.
Otherwise, you'll always find someone who has some problem with something, so there's basically no possible way to make a 100% great remake of a game like this. Name one thing 10+ years old that was remade/rebooted and was good. Indiana Jones/Rocky? nope. Bands that get together for new albums? Nope. Vidya? No way.

Remakes are moneymakers because they have a basis, the old audience, and since they are released in present day, they attract a new audience
The majority of sales come from the new or acclimated audience however, so remakes are tailored to modern sensibilities. This happens not just in vidya, but all media. E.g. House of Cards BBC (1990) vs House of Cards Netflix (2015).
There hasn't been a AAA turn based/ATB/whatever jrpg since the early 2000s.
Square knows that the modern audience would not receive such a game well.
There is a small group of people that do not acclimate well to changes in a remake. This group is over-represented here which is why it seems like "the audience as a whole" is unhappy.
These unhappy few are abnoxiously vocal as well.
The remake is not fucking anything up (except that the game will be released in several parts, the benefit of doing that from a consumer standpoint is dubious IMO). They are just remaking the game, and some people don't understand what that means.

FFVII is among one of my favorite games, but if I want the same damn thing I can go play FFVII on my PS3, my friend's PS1, my PC, etc.

Like I said, the best way to really describe it is like a combination between a traditional JRPG and ARPG. The first two iterations in the XIII series were like watered down JRPGs with tactics for characters that were not in depth. But Lightning Returns makes it interesting by having more options depthwise and by making it all Actiony. You only play as Lightning in this one.
I think FFVII remake and FFXV are going to be very interesting because it's a step further with what FFXIII tried to do but failed for the most part. What we are having is not only the next step in the ARPG genre, but also the next step in games that have Squad combat akin to Brothers In Arms and Spec Ops the Line where you control your own character, but you give directions/tactics to your teammates, too. This system makes more sense in a more action based setting because in turn based you can give everyone all sorts of directions already.
