Tons of reasons. Vampire are pretty though to control, but with a priest high enough they are quite useful. Crazy strong, they can control undeads themselves and they can hypnotize people. You can use them as cobaye in tests, you can use them as lie detectors. Hell, if you want to be a crazy priest, you can transform yourself into a Umpir or half vampire or hell, even a full vampire.
Why would you NOT capture a vampire if you could?

Not really. I go with D&D rules mostly. Vampires pretty much always have the same sets of powers. Can grow fangs, hypnotize people and surhuman strength.
