Why not all three? Because the game clearly takes influence from all three franchises. Anyone who has played those three franchises extensively can tell that Team Ninja is wearing the influences very prominently on their sleeves.
It originally was probably meant to be an Onimusha clone, since it was developed around the early 2000s. Then it went through intense development hell. Now it's emerged taking up new influences from Souls, particularly the multiplayer.
And here and there, you see tons of homages to Team Ninja's other big franchise, Ninja Gaiden. The village in the trailers looks like Hayabusa Village. Tons of dismemberment in the combat. And the demons look like the demons in Japanese mythology demons in Ninja Gaiden.

I think that they originally removed blood from Ninja Gaiden Sigma 2 not because of censorship, but because they wanted to maintain a more stable framerate. Ninja Gaiden 2 may have been a much better game than Sigma 2, but its framerate was often horrendous at times, especially at the bridge right before Elizabet, with the 100 ninjas causing your framerate to drop to below 10 frames per second.

That was kind of the point I was trying to make, every idea takes insperation from something else. No such thing as being truly original, every new thing is basically smaller parts of different old things, just more or less.
Nobody calls Dead Space or other games like it ripoffs anymore, because the things that RE4 introduced is now such a natural part of the ecosystem. These days the things dead space did "steal" are taken so for granted, so as a result it is seen as a much more original game.
