Consolewar shit aside, this is going to happen eventually. Bloodborne was a huge hit and has generated some solid hype. They're not going to turn down the massive amounts of money that they'd receive for releasing it on other platforms. PS4 people remain happy because they got a timed-exclusive on a great game, other platforms are happy because now they get a chance to play it, and the companies rake in the cash.
Dark Souls 3 is coming soon next year.

There's a lot more to a brands strength than just the sales figures though, and Sony knows this. Games that are exclusives get put on the back of their system boxes and plastered all along trailers and marketing that run with "exclusive to PS4". Regardless of the quality of those games, you have to be in the Sony camp in order to experience them. That has real worth to them.
This is exactly the reason that we don't have the Halo games on Playstation.

The fact that an exclusive game makes the top 30 at all is incredibly good for them. They care about selling their consoles more than anything. Hell, Microsoft made a whole graphics API and pushed it until it was standard just so people using it had an easier time developing for their platforms and a more difficult time developing for others (or, in most cases, they just don't make stuff for the other platforms)

Demon's Souls had quite a small fanbase though. It only sold around 150,000 copies the year it was released and sold far more a year or so after the fact.
Bloodbourne was highly anticipated and was hyped as one of the prime exclusives for the console while DeS was released three years after the ps3 came out to good reception but it clearly didn't hit it's stride until a while after it was released
Realistically they could make a boatload by selling Bloodbourne on all platforms but they could also make quite a bit selling more consoles as it's far more profitable and sustainable to get people to use your services and purchase more games for your system.
