I liked it. I played it without intentionally associating things with any fanbases or whatever and it was a fun and happy game, albeit a bit short and kind of tiring on repeated playthroughs for the other endings as a few of the jokes and scenarios only really give you the WHAM the first time.

I bought it and plowed through the Neutral and Pacifist endings today.
It's a game that makes you feel really good about yourself and likes to emulate having fun with friends. It's like Persona 4 in that sense. It also subverts the common RPG trend of unpunished indiscriminate murder.
Basically P4 for non-weebs.It's a good game. Not GOTY but still good.
Undertale is an interesting short pixelated RPG featuring a single linear cinematic story with 2 and a half endings based on a binary morality system.
it did a couple of big thing right in a somewhat original way and synergize greatly: a cute story, an "emotive" combat system, which is the most noteworthy achievement of the game, and yet limited to the few scripted fights of the storyline.
it did a couple of small thing right: having good music, having at least 2 challenging fight in the whole game.
everything else was mediocre and forgettable or even kind of bad, starting from the puzzles, story linearity and the one-line lifeless NPCs.
One should play it and enjoy it for the things it did right and not try to seek depth and perfection where there isn't.

I thought they got harder. Undyne, Muffet, especially Metaton and Asgore were all pretty challenging. Hell papyrus too. Most changed the gameplay/genre up a lot to surprise the player and each fight progressed in difficulty as they went on too, and stuff like the blue/orange things progressed throughout the game as well. I also though the enemies in Hotland were pretty challenging. Not that I found anything too exceptionally hard, but it wasn't a cakewalk, and there was a definite progression. I wish the Core enemies lasted longer, though.
And being easy isn't a bad thing. Kirby games are not pieces of shit, for instance.

The problem is it's pulling a Spec Ops, where the game tries to make you feel bad for doing what you think the game is telling you to do. There's no emotional connection to the scene if the player is too busy blaming the game for being vague or bullshit. Several anons in the initial release threads were turned off from the game solely from this moment, and that sucks.

I agree it's intentional, but I think there should have been a visual tell or two. For example: at half health, have the attack put a gash on her face and she winces in pain. That tells you all you need to know how badly you're fucking up. It's a lot harder to rationalize that it's the game's fault when it shows you what you're about to do, and Toriel's scar could be referenced at the end of the game if you catch your mistake.
Speaking of Flowey, it's a shame you only meet him at the beginning and end of the game. I guess what he does at the end of the Neutral run wouldn't be as surprising if you remembered he's still around.

One of the NPCs in those first few rooms gives you a hint at how to handle the upcoming Toriel fight by saying "You might have to spare somebody someday even if their name isn't yellow."
That was the game giving you a hint that sparing isn't about "winning" the battle by ending it when their name is yellow. Sparing is just one of many deescalating tools you'll have to use to avoid violence, even if it doesn't end the battle right away in that turn.
The only thing I dislike about the game is that goats in it don't have goat pupils. Those are cute as fuck.

Undertale's graphics are my biggest complaint about the game, but I still don't mind it so much because it was done by a single guy. He got some of his actual artist friends to do a few character designs and draw some backgrounds but otherwise he did everything on his own.

It definitely does get more serious in the endings, and in the Genocide run; part of what makes the game resonate so powerfully with people is that if you go through the game the first time sparing everyone (and then do True Pacifist to spare them all a second time), you're forcing yourself to eliminate everything you made yourself spend time with in the first place.
It's the formation and severing of bonds, and whether you think it's "normal" for video games to have such a powerful emotional effect on people or not, that's what tends to make people realize that this game is pretty good at what it does.
It is slow at parts, and while I personally enjoyed it I can see other people not enjoying it or believing it draws too heavily from Earthbound. For $10, I thought it was worth it.

The game gives a hint or two before the fight, and a huge whopping hint after you kill her once. If you really cared about >a bunch of pixels, then you would have figured it out.

likeable and believable characters, artstyle that balances simplicity with detail, unique gameplay, bad jokes that make you smile anyway, story so intricate that fucking EVERYTHING interconnects in some way, does a bunch of crazy over-the-top shenanigans for the final bosses, fight workarounds that allow for even complete newbies to skip difficult parts (my 11 yr old sister beat both the good and neutral routes), and bitchin' music.
The fact that all slain monsters are dead for good with actual representation of your actions having an effect on the overall story is something sorely lacking from 99% of games. The game also remembers 90% of the choices you made, and it lets you know that it remembered, prompting some players to ponder their moral choices in a fucking videogame of all things.
The game has 98% positive reviews on steam. It is funny, serious, light, dark, comfy, spooky, and does not discriminate against anyone. There is no excessive violence or major skill gap to close, and no scantily clad women for the female audience to be repulsed by; it is accessible to basically everyone aged 7 to 30. It's a game you don't have to be a gamer to enjoy, and so non-gamers aren't excluded from the potential market (like most would be with skyrim, dark souls, etc).
TL;DR
Ultimately, Undertale is popular because it does a LOT of things right, has a MASSIVE potential market, and goes above and beyond modern AAA titles with its features and functionalities. All at the reasonable pricepoint of $10, and without any hardware limitations. It is the literal game of the year, regardless of who likes this fact.
