Humans tend to be pretty adaptive.
Humans have pretty high endurance and we can survive pretty traumatic injuries.
Are we more or less intelligent than other races? Depends on the setting, of course. If its one where all races are spacefaring, maybe we get the industrious or scientific edge. If ayylmaos did exist, we can't possibly be a very old race- after all our written history is less than ten thousand years. But then again, look at how technology has moved in the past 200, 100, and even 20 years, and it really doesn't show much sign of stopping- we may not be close to FTL travel if it is even possible, but our rate of development is pretty high.
Maybe we're just hilarious and we know how to have a great time- most of humanity loves to party in its own way. Maybe aliens or other species are boring until we teach them how to liven up? +25 to diplomacy or charisma or something.
It's just important that in a conversation like this we be cognizant of the fact that we are lensing this through our own perspectives of what is normal. Maybe an alien race can live in extremely hot climates, but the window in which they live is very narrow (like they die if they go under 120F or over 160F).
I think humans just tend to be the baseline in most fiction because something has to be, and it makes logical sense for that baseline to be something you are familiar with.

I think Star Ocean does an okay take on fantasy races. It's far from ideal, but there's enough variety to keep me interested.
The games often have very few humans. The first game had two humans, and the second game only had one.
The other races are interesting enough, but not so weird that they'd alienate the audience. There's even some good lore attached to them. For example, the Fellpool race, went through evolution of their own. Like how humans are descendants of primates, the Fellpools are descendants of felines, hence the feline-like features, such as pointy ears and a tail.
They even break it further down into ethnicities. Besides Fellpools, there are variants, such as Lesser Fellpools and Highlanders. Lesser Fellpools appear even more cat-like, kind of like Felicia from Capcom's Darkstalkers series. Highlanders are descendants of felines as well, but the difference being that Fellpools evolved from cats, and Highlanders evolved from tigers. They have a "wild" look to them compared to the prim, proper Fellpools.
Besides Fellpools, you've got other races, such as Featherfolk, Muah, Lycanthropes, Expelians, Nedians, and Tetrageniots.
