The 3DS game has possibly the biggest amount of additions of any DQ remake yet. New monsters to recruit, tons more alchemy recipes, two new playable characters, new story for Medea/Angelo, new weapon types (fans specifically), new quests, screenshot mode, etc. And that's just the stuff we saw in the preview trailer. Who knows what else is in the game.
But all that said, Its still plenty worth it to play the PS2 version while we wait 10+ moths for the game to come out. The PS2 version is still my favorite game and holds up really well. Even better if you play an emulated version with 3x AA and 1080 resolution.

I like VIII more, but VII is also great.
I-III are directly connected (though you can play them separately). IV-VI have certain connections, but they're basically stand alone. VII and up are stand alone.

So's the remake. It took me 138 hours to complete (not 100%), though I really took my time and I wasn't sure what to do in some places which led to some aimless wandering. I've read on Japanese sites that the game can be completed in 60ish hours, so maybe if you know exactly what you're doing then yeah, it can be. Being able to read at a native level probably helps a bit, though DQ's dialogue is so simple I was doing nearly that anyway most of the time.

Not really. Some of the games are connected storywise (e.g. 1-2-3 and 4-5-6 form their own trilogies) but 7 and 8 are independent from the others to my understanding. Not to mention the story of Dragon Quest games aren't particularly deep or complex.

Dragon Quest is basically the definitive JRPG series. You go from town to town talking to NPCs, buying equipment, and fighting monsters. It's what you expect from a JRPG and it does it so well. Of course each game innovates in its own way but the basic structure is the same. They're just some really fucking well made JRPGs.

I'd recommend playing in order but if you want to play the best of the best start with 5 or 8
I - SNES
II - SNES
III - SNES or GBC (SNES is better overall, GBC has a couple more extras.)
IV - DS or Mobile (Mobile version has Party Chat restored, is otherwise identical to DS version.)
V - DS or PS2 (DS has an additional waifu to marry, PS2 has better graphics.)
VI - DS
VII - PS1 or 3DS
VIII - PS2 or wait for 3DS (Mobile version is gutted)
IX - DS
X - lol never ever because it's a MMO
XI - not confirmed yet but it will come out for PS4, 3DS and maybe the NX
