Attack Stance is when you have two units adjacent each other on the map when you enter a battle. The pair unit will assist in a follow up attack, but won't block attacks for you.
Guard Stance is when you have two units paired up with each other like in Awakening. The pair unit won't attack, but will block all incoming follow up attacks from a unit assisting in a Attack Stance. Also, you can't Attack Stance while in Guard Stance. Enemies can do it too.
Kids aren't as focused or relevant to the plot and more of just a side though. They don't impact the story in any way.

The first 5 chapters are the same for both routes, and I think there are 28 chapters per route or something.
Then you add in the paralogues, which brings up the chapter count.

To put it in some perspective, I'll give an example.
In terms of Victory Conditions for chapter 6.
Nohr: Defeat 4 of the 5 units on the map, which just so happen to be the Hoshido siblings and one of the Queen's Retainers themselves. You have access to Kamui, your maid/butler and gimped versions of your Nohr siblings.
IK: Defeat 6 units in 5 turns. You only have access to Kamui, your maid/butler, and Aqua, who is fragile and weak as fuck.
Hoshido: Defeat Marx. You have access to all the units you've recruited so far and Ryoma, who's pretty strong at that time, starts right beside Marx. You can end the chapter the moment it starts if you get lucky.
