Because those are natural group roles in that sort of content. If you have no roles, people will naturally fall into the trinity. Either you have no roles, or you subdivide the existing ones into partial-roles e.g. having buffers instead of just incorporating buffs into the standard trinity.

there's not a single healthy mmo following the eq model. Every mmo since 2004 has followed the wow model. But yes everquest is why mmos are in the state that they're in.
The sad thing is the grind isn't what made everquest/ffxi great. You could reduce the grind in half and it wouldn't be any worse for it. They created believable breathing worlds and let players explore them and created systems that coerced players into working together.
Also having more than 3 classes was pretty fucking cool.

I used to main healer/support in everything because noone else was competent enough for the role, but some ~5 years ago I completely lost my drive to continue doing that. I wasn't doing bad with it at all, I just lost interest. Probably got something to do with being literally unappreciated in almost every game and every situation no matter how well you do.
So nowaday I prioritize:
Stealth above all else > tanking > damage > support/healer in extremely rare cases anymore.

Damage is the most fun. That's why you always have way more DPS than any other role, in literally any MMO with this class structure.
I prefer games like Diablo or Vindictus where every class is just a different flavor of DPS, and they all get some kind of dodge, block or self heal to mitigate damage.
