Bloodborne is the most consistent. Dark Souls has some great stuff, but is also full of awful zones.

Bloodborne for weaoons. Vanilla BB was shit, but with ToH it has the most charming, satisfying, and interesting roaster of weapons easily.
DkS2 for armor, without a doubt.

Dark Souls = Demon's Souls for first. BB and DkS2 NPCs aren't very good.

They're all trash but fun. Demon's Souls easily had the most depth. BB feels the least broken. DkS/DkS2 are alright.
>Bosses.
BB easily again. Few shitter bosses, bosses have multiple phases, bosses can be tackled in various ways, they have decent HP pools and can't be literally 1 shot by Firestorm, etc. Other then that I would say some of DkS2 DLC bosses (Fume, Alone, etc) were the prototype for BB bosses, and are great... But the main game bosses are terrible. DkS/DeS are good, but the most popular bosses (Allant, O&S, Flamelurker, etc) aren't as good as the best bosses from BB or Allone/Fume.
>Soundtrack.
BB and DkS1 are in a league of their own, but I like Maiden Astrea from DeS... But it's just a shitty harpsichord melody.
>Difficulty/Fairness.
They're all about the same-ish. FRC Chalice is probably the only thing in any of the games that gave me a hard time in terms outright OP bullshit.

BB is easily the unilaterally the best in most of the categories written down. Everything from combat, weapon movesets, enemy design, level design, boss design, atmosphere, cohesion, lack of bullshit like Poise and BS spam, etc, all clearly favor BB.
There are problems with it for sure, but it's the best in the series.

DeS is easily breakable and you can easily be OP in. DaS2 you can't really break and remains hard. DaS you can become OP but it can be a bit of a gamble, probably best balance. BB it's harder to be OP in, but doable. Comfortable difficulty for me.

Please. It's barebones as fuck, the level design is basic as fuck in all of world 4 and 5, and half the bosses (including the last boss) can be one-shot.
It is, however, the only one with decent gameplay. BB is strictly better of course, but DeS is great compared to the shittiness of DkS/DkS2.

Grassmunching was pure cancer that killed all the resemblance of balance the game has at first.
Armors are completely useless and do nothing but slow you down.
World tendency made sure no one ever plays in human form.
DeS was an experiment. A cheap, heavily flaved but successful experiment that paved the road for DaS to shine and become a real success.
DeS still feels more consistent and finished compared to DS, but it's also obviously amateurish.
