You can cheat with manus with a bow, a ring, and a lot of arrows.
Also he's easier with a high poise high stamina heavy shield build since you don't have to be good enough to dodge his attacks and can instead block.

Basically, this is what happened:

>ring nerfed, doesn't work up to 50% equip load anymore
>people bitch that it's useless and stop using it
>some time passes
>people start using it again cause it's still good
Actually to my recollection in Dark Souls enemies have stamina and movesets for their 'weapons' just like you do as a player. I'm not sure if that just applied to humanoid characters or NPCs though. Pretty sure that was people's main beef with Dark Souls 2, was that many enemies had infinite tracking and no reprieve in their attack patterns.
That said, OP, I found that fight exhilarating but I died anywhere from 5-15 times. That boss is about reaction times, you can't tank through his attacks with a shield or just muscle it with poise, you need to dodge roll. A player can go through the whole game his first time and not know this, but you have frames of invincibility in the middle of your roll, where no damage whatsoever can hit you. You just need to get the timing of that down and this enemy becomes a breeze.
I did my first run through with no shield so I had iframes down pat.
I really liked this boss, actually. Felt like I was playing Monster Hunter!

the DLC was my favourite part of the game because every boss was fast and unrelenting and you had to rely on good dodging and reaction time, builds almost felt irrelevant outside of roll speed. Does that mean I'd enjoy Monster Hunter?
I really likes that fight, just have a lot of stamina and be ready to dodge... If you cant to that i have no clue how you got so far

Also you don't "level up" in the traditional sense. You carve stuff out of fallen monsters, and can make cool gear with it. That gear gives you all sorts of boosts. There are also all sorts of weapons that play very differently from each other.
