You can speedrun any genre, glitches or no. Every game usually has more than one category for speedrunning. For example, the two most common categories are Any% (complete the game as fast as possible, which can involve using glitches to bypass significant parts of the game) and 100% (fully complete the game, glitches can be used so long as they don't make you skip anything). There are some "glitchless" categories as well for games that are notoriously broken.
Pretty much the only genre you can't speedrun is rhythm games, since they generally take the exact same time to complete a level.
