There's no plan for that currently. I think it would be okay to let the player "customize" Senpai at the beginning of the game, but not choose boys from a list.
The "customization" would come in the form of Yandere-chan daydreaming about what her ideal boyfriend would look like.

Before I release a playable demo, I'd want to have a target girl and at least 10 ways to kill her. Stuff like:
1. Stab/Bludgeon/Strangle, dispose of body.
2. Push off rooftop
3. Push down stairs
4. Drown in toilet bowl
5. Frame her for one of your crimes, getting her arrested
6. Frame her for breaking school rules, getting her expelled
7. Convince the rest of the girls to bully her until she commits suicide
8. Find out who else in the school she has a crush on, and set her up with that boy instead.

10. A method that will only apply to that one girl and won't work on any other girls.
After all of this is in place, it should be possible for people to "get" how the game plays, and provide feedback on how to improve the game.
The demo would also have to have working NPC AI and working "fail" conditions (getting arrested, permanently ruining your reputation at school, etc).

The game is supposed to be about feeling like a predator preying on defenseless victims; like being the monster in a horror film.
It’s easy to get a messy kill. It’s difficult to get a clean kill. It’s very challenging to pull off the perfect crime. You will have the freedom to slaughter schoolgirls indiscriminately, but you will also have to deal with the consequences of doing so.
I might implement “Hit buttons in a sequence” kills if I have a 3D animator who can animate all of the outcomes of failing each button in that sequence. But without the resources to do otherwise, I’ll probably just leave it at “Press X to kill” for now.

When you are given a target girl, you have 5 school days to kill her. You can freely wander all around the highschool and find a bunch of different methods / opportunities to kill her, some of which might require 5 full days of preparation and mastermind planning. It's pretty much free-roam / sandbox / free-style, but you do have a specific objective that you can accomplish by using the game engine however you want to.

In the final version of the game, NPCs will struggle if they see you approaching them with a weapon drawn, but if you take them by surprise from behind, they will not struggle. Killing animations will also be longer / more elaborate / more noisy the higher the Yandere Meter is.
Students will not attempt to fight a crazy girl with a weapon. Yandere-chan will always win physical confrontations. The only girls who might fight back against her are the present of the Judo club andthe other Yandere schoolgirl.

I don't know, wouldn't someone who is having his own life at risk try to do whatever it takes to survive? peraphs if you try to attack one single person it might run away, but if we talk about two or more, numeric superiority might give them bravery or somethin'

You gotta spice it up with several real boss fights.
The delinquent girl would obviously fight back, for instance. And maybe the class president has several goons who gang up on you and you have to desperately knife them before they rape you.
It would be good variety for the gameplay and also some character development.
Maybe if you set up the perfect murder you can cheap shot the boss girl with a special kill scenario, but if you haven't planned ahead enough you have to play the default boss fight.

You could get ranked at the end for being a more violent or a stealthier killer, obv since it's a stealth game the latter would get you more points but the former would be more fun

Definitely. You could put a love letter into a girl's locker saying "Meet me on the rooftop, I want to confess my love to you." Then later when she's on the rooftop, push her off and leave a suicide note behind so that her death is ruled a suicide.
Of course, after this, the school will install suicide nets / a fence on the roof / lock the roof so you can't just spam / abuse this method.

If you're seriously that dedicated to your game, I have a suggestion.
Make it so that if Yandere-chan murders a student and the body is found, but no one knows who killed her, the school staff adds security cameras to the school to monitor everything at all times, making things harder for the player if they fuck up and don't dispose of the body properly.
