What is a good RPG that has a "old school feel" (dungeons, undeads, goblins, sword and sorcery; not like skyrim or that shit) but is actually modern in the mechanics? (no isometrics like baldur's gate) and a classical
class structure (healer, melee, rogue, magic-user)
No Grimrock/Dark Souls/Roguelikes

Bonus if it doesn't weight too much.

Does something like this exist?

Amalur was pretty good. Never finished it though.

Divinity 2 was fun, I enjoyed it quite a bit. Usually gets pretty cheap on Steam too.
Haven't got around to Divine Divinity, hear it's good though.

Big world, cool dungeons, entertaining and quick combat...

However- it's pretty badly optimized. I'd say pirate it first to see how it runs on your computer.

Dragon's Dogma: Dark Arisen is what you're looking for. Unquestionably one of the best games I've ever played, and the DA expansion content makes it even better. There's no reason for you not to play it.

Also, if you ever get to the point where you're not a big shit, Divinity: Original Sin is really good. It's not isometric, but it is very traditional with the structure of the exploration and the combat is pretty tactical.

apart from fulfilling all the criteria you mentioned, it's probably one of the finest games of the last ten years, rightfully having a place on many top lists. interactivity and player agency have hardly ever been handled so masterfully as in this game. definitive recommendation from me, you will easily be able to replay it often times since the classes are so different.

The Etrian Odyssey games are pretty good for this, if you don't mind anime character portraits.

But even then just going from one place to another in the map is absolutely awful and uninteresting, and you can't wander alone unless you want to be murdered by a cackling ghost.
Companions are good, but they repeat sentences while traveling giving them a robotic feel and ruining my ASCII immersion.

The way you converse with people and the actual quests they give is in the right direction in terms of gameplay but is shit at its current state, the combat is shallow with a coating of "deep" (aka lots of body parts that don't change shit)

Not to mention the ASCII display which is unnecessarily cluttered with all kinds of characters representing useless things that shouldn't even be displayed outside fortress mode.

I just want a game where I can recruit folk, trade, drink ale, go out and explore dungeons to gain reputation with the nearby villages.

While it hasn't been updated since 2003, NetHack is a pretty good roguelike dungeon crawler. It might take you some time to get used to the graphics(ASCII, but there is a tile-based version) and the controls, but it's a very fun and replayable game.
