Well, the top players have spent thousands of hours in this game and its predecessor. It makes sense that if you've been practicing long enough to have seen the shot you just made hundreds and hundreds of times you'd be fine with just skipping it and getting on with the game. If, on the other hand, you're not very good/haven't played long, it's logical that you would relish your successes more, hence low level players milking any goals they get (and if it's a especially lame shot, they may enjoy making a big deal out of it, just for shits and giggles).
As for the shittalking, the Dunning-Kruger effect may explain that; it says that humans who are not good at something don't yet have the ability to see the whole picture and realize this and so think they're great, while the opposite is true for people who are highly experienced in the area and realize how much they still have to learn.

I only duel if I'm closer to the ball. My teammates should be going for boost during that time, since I always tap it to the right or left, away from their goalie having an easy shot at the net.
