He's a super solider. Even in the Winston trailer, he looked young in an image with Tracer, which was at the latest, 5 years before the game, meaning Tracer was 21 and Soldier seriously couldn't be older that like 52.
There's a quick behind the scenes trailer out there were we see old Soldier without the mask, the only difference is that he grayed and thinned out up top. He just took the last 5 years really hard.

Genji is a cyborg, they barely age.
Symmetra is 28 years right now, 4 years younger than pharah. We only know that she was choosen by Vishkar after the Omnic crisis (we don't know how long after it) to become a hard light architect.
We also know the omnic crisis was over thirty years go, so Pharah was still a baby when it first happened, so that picture is probably taken after the crisis ended.
That also means that symmetra was born after the crisis. She remembers growing up in that india shithole, so she was only picked up and groomed by vishkar after she was already a child.
I don't see the age problem with symmetra;
According to the Overwatch website, the sleep only works until the person sleeping takes damage.
The grenade also does a DoT to enemies and a HoT to allies, while eliminating enemy healing and boosting ALL allied healing
Her ult boosts allied speed and damage while reducing their damage taken
The sleep seems pretty balanced, and the grenade seems balanced if you know that she has no movement abilities.
