Because her entire appeal is that she's an endearing 6.5-7, the archetypical girl-next-door type.
Unlike, say, Eva Green, your average woman isn't intimidated by JLaw's endearingly doughy visage, and your average dude is that much more into her because she actually looks "attainable" to a large percentage of men.
Whereas in the past, Hollywood gravitated towards stars like Robin Wright, Nicole Kidman, Naomi Watts, Jennifer Connelly, Sharon Stone, Charlize Theron, etc, they discovered that those unquestionable 10/10's (in their prime, at least) were off-putting to women who were threatened by their overt sexual market value, while being equally off-putting to men, because even your average Chad (or anyone who doesn't look like prime Brad Pitt with money, a big dick, or some combination of the two) will look at one of those 10/10 Hollywood actresses of yore and say "damn, son, she's way out of my league".
So Hollywood, desperate to remain relevant in the age of the internet, decided to try something new.
