The fights in the OT were also more dynamic, had a bigger variety of starfighters, and had more going on that the ones in VII.
Episode IV alone had Y Wings, X Wings, A Wings, TIE Interceptors, TIE Fighters, TIE Bombers, and dozens and dozens of ships flying around to meet the Rebel Squadrons. in fact, the rebels had several Squadrons take on the Death Star, not just 8 X Wings.

The entire battle was a farce.
Dooku was supposed to "capture" Palpatine, but in truth he was baiting the Jedi in order to give Palpatine more power. It was a false flag attack.
Also, after Dooku was killed by Anaking, and Grevious ran away, with their two main generals awol, the battle pretty much ended.
No reason for troops to keep fighting if the chain of command is destroyed, and you're objective, the capture of Palpatine has failed. no one has any plan to get him back from the Senate and Jedi Council. Especially without Dooku and Grevious.

Bullshit. Well, not the first sentence, but the second one. The aerial dogfight sequences in VII were incredibly bland, which isn't surprising because midair combat has always been a huge weak spot of Abrams' (the Star Trek movies were bad with this too). The OT dogfights always had a stable camera and great choreography that really made you feel the weight of the ships as they moved through space. The VII air fights were slightly better than the ones in the prequels, but were still too messy and uninteresting.

Firing a rechargable beam, or crashing a billion dollar space ship. Same reason it's better to have drones fire missiles than just crashing them into place in our real life military.
