I think it's fairly safe to say the show's direction will be pretty different. Dany will probably sit on the throne with Jon as the warden/king of the North. Remember, there's only 13 episodes left, which will most likely be spent building up Cersei, Euron and the WW as the final bads of the series without any real twists in sight.

Just a theory, but I think it's a strong one. There's no way the first men could have built the fist of the first men north of the wall if it was as cold when they first spread across Westeros, they'd have trouble surviving at all if you had decade-long winters every so often before they'd have time to establish strong farming and storage facilities, and the Others being ice-elves and bringing snow-storms with them make it seem obvious that they're connected to the winter fuckery. So the obvious deduction is that the first men could spread much more easily across Westeros because the seasons were regular ones, and then the Children created the Others and the seasons got thrown all out of whack as the Others gained in power and rebelled. Fuck no. The Others obviously turned on the Children. The Children made the Others be really easy to kill with dragonglass, the weapons they used. And it's definitely not a background plot. The whole society's structure is based on that shit, and the final showdown with the Others that the story is building up towards is linked to it. It's not something you can just ditch.

They're not medieval in all parts. Winterfell has greenhouses heated by underground hotsprings and shit. They've clearly focused a lot of attention towards building storage facilities and maximising food production and preservation for the level of society they're at.

They preserve grains and salted meat in large quantities, and then there's pickling. Then they trade with the non-ice-covered cities to supplement things. But due to snow-storms and the non-snow-covered places not always having enough food for themselves that's not entirely efficient and old, young and weak always die off every winter.
