Just getting into this guy, I know really late to the party. What are the 10/10s and 9/10s of his filmography? According to the 10001 Movies To See Before You Die book there are at least 15 worthy of viewing.

Every 30 minute episode is like a well directed and writen movie. He put a lot of effort in to them
Just watch all of them. Start from the first, then move your way up chronologically. There are only about 50 of them. Watch 2-3 films a day and it will take a month.
Just do it. It's very rewarding.

My favourite is Rope, because I like ham-handed philosophical discourse. But also because it's genuinely good.
Topaz is massively underrated overall, but I see some love on /tv/ for it.
It's the best "Hitchcock pretends not to be Hitchcock" and its quite special. I hated it when I binged Hitch' in my youth, but it keeps growing on me.
Frenzy is better than Psycho imo, I just think it's so off-putting (as it was for me) many people new to Hitch might miss the nuance.

found vertigo and north by northwest to be hugely overrated, the cinematography is of course good but some of the dialogue and acting was terrible

Acting and dialogue are just on par with Hollywood standards of the era. I've never found either of them to be exceptional in his films.
Hitchcock cared more about framing, new techniques and fancy cuts, ways to push the medium forward.
