Coen brothers films are praised for their competency. The best Coen brothers movies are just super fucking well made. A masterclass of editing, cinematography, writing, acting, etc.
They are just super solid films that appeal to a wide range of audiences, there isn't really anything super complex or deep about any of their movies.

memorable characters, great dialogue, acting is never bad even if the movie is, over arching themes, John Goodman and Steve Buscimi, blending of humor and violence/drama, wonderful cinematography

It's an adventure story. The Big Lebowski leaves a lot of loose ends, and doesn't really answer any of your questions. That isn't the point of the movie. You're following around the Dude and Walter on their insane adventure through madness. Having a real ending to that movie would betray everything you watched before it.
Fargo is just a crime drama. I don't even understand what you don't get. That movie has a very rigid plot structure with drama building up and eventually exploding followed by a resolution, all with comedy mixed in.
You sound like you're probably stupid, and maybe you should get smarter. Because if you don't "get" these movies, then there's probably a lot of other things you don't get.

the big lebowski is a comedy, other than some light baby-boomer shit that's it's purpose. it is by no means purposeless, although i agree the plot is all over the place, and i suggest intentionally so.
fargo's intention is to lay a formulaic crime drama against the backdrop of the cheesy upper-midwest. it's satire, not "just a crime drama."
the coen brothers use surrealness to amplify their satire, and stuck with that atmosphere for their serious movies like no country or true grit. but mostly they are satirists.
