I think you'll really enjoy it (I'm >>69739047 ), it has great atmosphere, a fantastic story with some of the most interesting side-quests I've ever seen in a game, characters who are actually well written and the actual game mechanics are really fun. The main quests and side quests are all pretty unique, which is the bulk of the quests. You have a few fetch quests, usually for gear but these tie in sometimes with side quests so they rarely feel repetitive. The final sort of quest are monster hunts, where you... hunt monsters. Probably the most repetitive stuff in the game, but each monster is different and the locations are usually varied so you never feel like it is too repetitive. Some monster behavior had a nice touch, sometimes you'll see it stalk you in the distance behind a tree and suddenly appear behind another tree much closer, makes for a very unsettling experience sometimes.
I think for me, the atmosphere and environments this game delivered was the most impressive part, Skellige is... Icelandic? Maybe Greenland, whereas Novigrad is a big bustling city and Velen is more swampland and depressing towns - so everywhere feels different but all have localized areas that feel even more different (ex. forests in Skellige feel different to the mountain regions).
I loved the combat, it's really punishing and the enemies are varied. Acquiring potions is actually fun, and using them more so - character ability customization is also quite well thought out, though it might be worth installing a mod to make all abilities accessible straight away, as some are hidden behind level locks which I don't think served much purpose. Also horse riding is so much fun and a great way to explore, boats felt a bit rushed by you don't really spend much time in them anyway, unless you want to unlock every chest in Skellige. The only thing that was a bit sucky was the lack of customization for armors and weapons, but it doesn't detract.

MGS5 was a questionable entry to the series. The "open world" was a bit pointless in all honesty, I doubt most people spent 10 minutes on a hill tagging enemies before just entering the area they'd have to slog through three more times over the course of the game. The two locations were pretty boring, Afghanistan where everything looked the same, and Africa where the jungle wasn't a jungle but a few scattered trees between a few bases where everything seemed to happen. Also the combat was so easy it didn't matter if you got spotted or not, so there never felt to be any sense of danger.

Don't listen to them, it's fun pulpy fantasy with great characters. the anthology books are very hit and miss as well, some short stories are excellent, while others (especially the one about the gnomes and the doppler) aren't that great.
The last book is probably the msot hit-and-miss of them all though. very emotional and some great conclusions to character arcs, but also has the msot retarded amount of narrators I've ever read (think it's about six different ones, yes I'm serious).
It's not great literature, but it's not bad either.
