The Driver was living in his own movie. It's why he made dramatic pauses when talking and generally behaved the way he did. So when he put on the scaryman mask to do some murderin', he was playing a different character that who he envisioned himself to be. He generally saw himself as a good guy who does the right and noble thing, but because he was going to outright kill some dudes he needed to feel like he was that person.
Which is why after the hotel and the elevator he looks so shocked and afraid. Not only did he have to reconcile the violence he was inflicting, he was ashamed the character he was playing when stomped that guy's brains in, or stabbed that other guy in the chest with a curtain rod.
The Driver has no problem doing violent shit to protect himself or those he cares about, but he would generally prefer not to be that person.
