Astapor didn't really seem to have much in the way of ships, and she never conquered Yunkai. They surrendered and let the slaves be free and in return Dany didn't take the city. Still, it's unlikely that she would have been able to take the city before the masters destroyed or sailed away with the ships.

It depends entirely on the situation. There have been historic instances where well disciplined infantry have let themselves be charged by heavily armoured cavalry(cataphracts would be the ancient equivalent to European knights) only to surround them, dehorse them, and finish them off incredibly easily before they could recover. And a full on charge against a phalanx formation is not just "poking a spear through" the armoured knights, and most of the time the horse would get fucked on a similar formation and then the rider would be finished off or not be able to contribute more to the fight anyway.
This is for knights, mind you. An entire westerosi army is not made up of knights, and most of the levy portion of the army would undoubtedly break on an unsullied phalanx formation without any problems, with the unsullied themselves likely taking very little casualties. A group of knights would undoubtedly only be a decisive factor in a fight against unsullied in the event that they flanked them, but we have examples in history of certain very disciplined hoplite troops(spartans especially) being able to form squares and turtle like formations that cover all sides of the formation, eliminating the possibility of being flanked, and the biggest weakness of the phalanx formation.
I'd also like to point out that Unsullied are probably each better individual fighters than the majority of knights, they are more skilled with their given tools and are wildly more disciplined and feel no fear or pain. They would literally all die to the last man before surrendering, and this would not be the case with knights. ESPECIALLY if you throw dragons into the mix.

If Dany and her advisors knew well enough to engage in an enemy army under similar conditions to, say, the field of fire, all it would take is setting some shit on fire to completely fuck the enemy army.
