I don't think D&D are masters of the craft by any means, but there's no way they could stuff all of the book material into the show without turning it into a snore-fest. However, once they start cutting material they necessarily have to work around some holes, which will look clumsy when compared to their handling in the books.
The Dorne subplot(s) (and also Whitebeard's death now that I think about it) were clear examples of D&D truly fucking up of their own accord. A lot of the other fuckups seem to stem more from needing to cut material to make the show manageable, but the Dorne stuff post-Oberyn was flat-out terrible, especially considering that it was pretty much unnecessary for the overall plot. Not only was it poorly put together, but it deprived the show of a good storyline (Jaime's Riverland escapades), as well.
All in all, the Dorne subplots are objectively bad and as someone who actually still enjoys the show, I cannot think of any way in which they could be reasonable defended.
