Luke had YEARS of piloting experience. The fact that ANH had Biggs as a character reference from his past before the film establishes that he was accomplished already. He was supposed to go to the academy to become a starpilot but his uncle kept delaying it even though all his friends, like Biggs, had already joined up years ago.

ships like fighters aren't that different from one to the next. Once you have some experience you just need to feel the manuverability of the particular plane and how it responds to varying increments of using the controls, know where all the instruments are, and that's about it.

Poe Dameron piloted a TIE fighter just fine after he got a feel for its maneuverability, which just took a few seconds.

Now if he'd had to fly the Falcon it'd be a little different because the Falcon has an awkward shape and cockpit location, but that doesn't stop Rey from flying through a crashed Star Destroyer's engines.
