i think grand admiral means he's commander of ships. grand moff means you're a glorified governor of a space sector. I don't know how the structure of command works, but I'm going to assume the Admiral might have more authority than the regional governor.

Moff is the highest. Remember that Veers was a general because he commands ground troops so the grand admiral is probably responsible for the fleet which makes sense because they would construct the Death Star.

The grand moffs were basically underbosses to the emperor. They were in charge of the government of their regions. Grand Admirals were military positions in the navy. Basically they're both people with a blank cheque of authority written by the emperor to carry out imperial policy in their name.

Vader was attached to Tarkin's command, probably to act as the Emperor's eyes and ears during a pivotal moment in history -- the deployment of the Death Star. And also likely to kill Tarkin if he looked like he was starting to realize he could be Emperor with that sort of firepower. So Vader, despite being the Emperor's right hand man, was under Tarkin's orders for the duration of the mission.
After Tarkin got himself killed and the Death Star blown up, by ignoring Vader's advice, you'll notice Vader was put in direct command of things, and got shit done.

How come the main character is another pasty white girl? Disney is racist and transphobic. It's 2016, it should be a proud transwoman of color because of all those poor children who have to grow up and be told by the media that they aren't good enough to be represented in big blockbuster films. I am very disappointed, Disney has made good advances in diversity and tolerance in recent years but it isn't nearly enough, especially considering all the trans suicides that will happen this year. The radio dramatization for A New Hope includes an extra scene involving Tarkin and his subordinate. It basically gives a glimpse into Imperial power struggles; Tarkin considers leaving the Death Star during the Rebel attack but is warned that doing so could be construed as weakness by rivals onboard, rivals who might not relinquish control when Tarkin tried to come back.
The officer seen in the movie suggesting that Tarkin get to his shuttle was a possible rival, hence Tarkin's somewhat arrogant sounding reply. He was putting on airs to appear confident and strong.

ROTJ was the part that was edited the most, and mostly because Luke dueling the emperor and vader on the lava planet was impossible to do with the day's technology. The second death star was Lucas' solution to that problem. Then the Ewoks came when it turned out it was too expensive to make enough wookiee suits to film scenes, it was way cheaper to put kids and midgets in ewok suits, which were made with cheaper wool and synthetics while wookiee suits were made with real yak and mohair.
But Lucas planned a lot more shit than people give him credit for. The Sith thing was around from the start, things like the rule of two didn't come until episode I, but midichlorians were actually in his writing since the 1970s'.

It's an established the fact that Vader did not become Anakin Skywalker until the 4th draft of ESB. Nothing in ESB or RotJ was planned during the making of ANH, and various details from ANH were retconned in them, Vader's identity being the biggest one.
