Because he was a repressed gay man who was pigeonholed by his father into being part of a traditional family that he hated and so he was looking for any sort of escape from that. It's quite clear through the entire movie that the only person he ever loved was his deceased partner. He takes this anger out on Doc throughout the film.

I assumed it was sort of his last-ditch attempt at asserting some sort of dominance over Doc. He's feeling extremely fucked over, doesn't understand what Doc sees in the stuff, but he figures if he can mess with Doc and relax at the same time, then fuck it let's go for it.

The movie is one of the greatest adaptions there is, but if you like the aesthetic of the movie, the book goes into far more detail about the Golden Fang, the gangsters behind it, ETC. Lots of yakuza involvement that wasn't in the movie at all.
