At that point he was mad as fuck because a dude just beat the shit out of him. Not mad enough to kill but you could tell he wanted to hurt Batman. I think he had enough of trying to convince him after the sonic trap and machine guns. He wanted to subdue Batman at this point or at least show his physical superiority. The Kryptonite gas was the first indication that Batman was not fucking around and he couldn't afford to give him anymore opportunities to fight back.

Also Batman's entire plan seemed to hinge on Superman walking toward Batman on foot (assuming he didn't have backups in mind, but as they aren't in evidence there's no real point in assuming). Superman is fast enough to not have sprung a damned thing if he just decided to charge into him the way he charged into the terrorist.

What's even worse is I'm almost positive that the Mad Max batman sequence was actually the Flash showing him an alternate universe where Batman killed Lois or some shit just for a big Injustice reference.
Of all the dream sequences it was the least dreamlike (Batman getting knocked out only to wake up again), and Flash was screaming about LOIS LANE! and how she was the key to all of this.
Made no real difference in the movie, either.
That was BvS's biggest problem. Instead of showing a couple of references to the Justice League in a post-credits sequence, or at least at the end of the movie, they clumsily shoehorned them in. It definitely contributed to the movie's already awful editing and pacing.

Dude is looking like a walking arsenal and given that he had other traps at the start of the fight, he couldn't really chance just holding Batman and talking to him. He went for concussive damage to incapacitate him or at least demoralize him. That and he probably abandoned the idea that Batman can be reasoned with, the desperate plea for help at the end is the only thing that worked but it was still just a desperate plea from a guy who sees his imminent demise.

When you're capable of stripping a bunch of armor and guns off of a guy at near the speed of light and are capable of flying 47 thousand feet in the air, you're pretty capable of doing whatever the fuck you want.
Incapacitating Batman is easy unless the writers decide it's not.
