I haven't seen the third but I really liked two apart from the main story
It was basically the first one but with girls instead of the guys but I really loved the subplot of the guys who get to kill someone at the place and I really love some of the shots as well. Part II is an example of being ruined by the first which is absolute trash.
The 3rd was probably better than the 2nd (still a 5/10). Though nothing at all like the others, felt like they just slapped the name on it to sell more. Even though it was straight to dvd in the first place.

The first two Hostels (both written and directed by Roth) have some attempts at sociopolitical thought but it is fairly sophomoric and high school essay level of depth.
Anything Hostel attempts is done better in The Purge.
I enjoyed the first two flicks but that third one is a real shit heel.
