If I remember rightly, the novel is presented as if it were a modern English translation of a real ancient manuscript. The same conceit can easily be extended to the movie. The use of modern coloquialisms like "back on the menu" don't need to be interpreted literally, but merely as easily-understandable alternatives to whatever expression would have conveyed an equivalent concept in Third Age Orcish.
