Why didn't they have an imperial fleet travel alongside this thing again? The first death star didn't even have a shield generator. 20+ Rebel capitol ships focus firing on the laser emitters could have done some serious damage to it logically. That's exactly what they did at the end of Knight's of the Old Republic.
A couple of Star Destroyers would have fucked up the X-Wings and there'd have been no episode V, VII, VIII.
Because it was a fully operational battle station that should have had like 100s or 1000s of TIE fighters plus turbolaser. Thankfully for the rebels, the plot said otherwise.

Anyway, the deathstar was full of big ass blasters and there where a lot of fighters inside it.
But at the end of the day, things had to be a bit convenient for the plot

If the same rebel assault force that attacked the Death Star II attacked the first one they'd have been fucked. TIE fighters and turrents can only do so much.
it was heavily armed and heavily shielded.
Any cruisers or battleships approaching would have been wiped out easily.
There was no reason to protect it from a handful of snub fighters because there was no reason to think a few small ships could do anything to the station.
But the small ships could pass through the shields designed to repel battleships.
The small ships were fast and agile so the large cannons designed to shoot large ships could not target them.
TIE fighters took out most of the attacking fighters.
No-one came close to hitting that 2m wide exhaust port with a missile.
Vader was taken out by the Falcon doing the flying out of the sun trick when he was about to destroy Luke.
Luke shot the exhaust port without computer targeting. He is the only proto-Jedi left alive in the whole galaxy.
Of course the whole thing is not exactly realistic but there is enough there if you are willing to supend disbelief in an action adventure where a young pilot is guided by the Force and makes that near impossible shot. And he didn't make it alone. Kenobi guided him.

The DeathStar could (and likely did) carry a full escort fleet within its bays. Tarkin just didn't see the point in actually deploying such defenses, he didn't even launch any fighters, that was Vader's call.
Heroic adventure is usually far fetched but this WAS thought through as far as possible.
They underestimated the Rebels' power
You might also argue that, as the Death Star was about to blow up a planet, any big slow Imperial ships would have been better well away from it.
The shields would have hindered them anyway.
Death Star II was only half bullt and the shield was ground based. The proximity of Imperial capital ships were part of the Emperor's ruse to fool the rebellion into thinking DSII was inoperative.
Again, all these stories are action fantasy but no matter what you might say, there was a lot of thought put into rationalising much of it within the fantasy setting.

Well, LOGICALLY, you wouldn't hear explosions or laser noises in space and the spaceships wouldn't have to bank and turn like airplanes they could just rotate along an axis because there's no gravity.
