I mean think about it. They actually make it a plot point how she keeps growing in power, as she kills people. They literally make it a part of the plot, how she gains XP and levels up, unlocking new abillities like it's nothing.
Kreia never taught her how to use Mind Domination. She never taught her how to just Master Speed or anything else. She taught her a tiny bit about meditation, and Atton taught her how to play pazaak. Everything else, she did by herself, and they literally spell it out in the dialogues that this isn't an abstraction, but actually what's happening.

You could adapt a few of the better novel series into films. Honestly things like the Jedi academy series, or the x-wing series would be better served in a TV format.
Probably not surprisingly the EU was almost always at its worst when it was trying to stick too close to the original characters and the movie plot points. One of the best EU novels of all time is I, Jedi. A story about a completely EU character having to learn to use the force to save his wife who was kidnapped. He has to learn at Luke's academy, go undercover on some armpit of a planet, join a pirate crew, fly a piece of shit fm fighter for them, and eventually track down his wife and rescue her. It's a wonderful contained story that feels very much like star wars, there isn't anything stupid or pandering in it and it gives you every slice of the universe you would want.
The EU isn't all Luuke and suncrushers, sadly it just mostly is.
Also Rey is way the hell worse than Mara Jade.

The reason she is as powerful in-universe, is literally the same reason she is as powerful as she is, in the meta-game. She gains power through death. XP from defeating enemies is an actual, substantial thing for her, within the lore, even if it's not something you can put a number on, and so is the inexplicable growth of her power.
By addressing it in the plot, they make it part of the story, and part of her character.But again, given the context, it's nto distracting, so while she looks like a Mary Sue, I think it's well justified.

Sheev didn't just magically start with the ability to cast force element, it's really after episode 3 he has the time to dedicate himself to learning every fucking thing ever related to the Force since he has almost every holocron and force related object in existence in his warehouses. What movie did I make an apology for? (I'm first two and last.) I don't think I said anything about any of the movies, I just talked about something interesting.
Personally I think the Force Awakens is a piece of shit (I'm assuming that's the one you refered to) and while it would entertain me if they went the Kotor route with the other two movies, that won't change the fact that it's shit in my opinion.As for it not being canon, here's a short list off the top of my head:
Old Republic/Old Sith Empire symbols in the Clone Wars. Malachor canonized as a horrific battleground in The Clone Wars. Moraband (Korriban's other name) on canon space charts. Rakata Prime on canon space charts, around the area where the missing puzzle piece from TFA pointed. And on top of that, there are parts of the new movie's score that sound eerily similar to a few pieces from the Kotor soundtrack.
Not saying it's canon, but Disney's doing a hell of a lot to make it look like it is.

Yeah, that's what happen with Shadow of the Empire. It was a multimedia thing for all but a film. What really hit it's popularity was the classic N64 game. I think after that game, the SotE and even star wars as a whole and it's franchise was revitalized again.
