He has that manner of speech all throughout the saga, but it's treated with much more rigidity in the prequels whereas in the originals it was something he lapsed into and out of as needed.
It also helps that the dialogue in the original trilogy was deliberately written to be accomodating of his unique speech pattern where it was used, rather than full of awkward aphorisms like "Not if anything to say about it, I have" like the prequels.

This is pretty simple, when they wrote the prequels they forgot that Yoda was a 900yo Jedi master who had a deep understanding of the force and basically didnt need to use a weapon as he could probably kill a creature with his mind if he was so inclined. They realised this doesn't play well to small children as theres no really *flash* to it. So they had to make Prequel Yoda, who lets not forget at this point is like like 800, bounce around like a retarded fuck head and permentantly speak retarded.
If you've heard foreign people who know English quite well speak, they sometimes get grammar/context mixed up. Thats basically what Yoda was doing + wanting Luke to underestimate him. Which was part of his training. Which was all forgotten for the Prequels.
