A character who is presumably going to be one of the main villains of the series getting his ass handed to him by someone who barely qualifies as a novice in the first installment doesn't exactly evoke a feeling of suspense in the viewer. An antagonist in these types of stories is typically insanely overpowered to provide the protagonist something to work toward overcoming. If there's no concern that the hero might lose, there's no drama. It's boring, like playing a video game with an invincibility code on.
Obi Wan was one of the good guys, so him getting taken out by Dooku was acceptable for the drama of the scene.

It took it as her touching the lightsaber for the first time unlocked pieces of some repressed knowledge that she had forgotten. She gets overwhelmed by it, gets freaked out, and that's why she takes off. It wasn't until after that happened that she started using Force powers. Unless it's a huge red herring, it's fairly obvious that she was one of Luke's students before Ren freaked out.
