Young Frankenstein feels like a genuine and inspired satire. When I was a boy I didn't know that it was made much later than the Universal monster movies. Mel's interest in that Victorian gothic feel is even evidenced by his spearheading The Elephant Man.
Spaceballs just feels reductive and insipid. Clearly Mel did not give a shit about Sci-fi.

But space balls had GREAT production values, which is part of what makes it great. They didn't half ass it, except when it was funny to do so.
It's got great gags that fit the theme, is charmingly self aware, laser guided satire, and some great comedic performances and deliveries from genuinely funny people.

Pretty much this. Young Frankenstein and Blazing Saddles are great because they parody things that Brooks (and his co-writers) clearly loved and had a great time having fun with. Pryor and Wilder are probably responsible for a lot of what works in those movies, too, but a big part of it is that love is behind them. That's obviously not true with Spaceballs. Most of the jokes are just sight gags and other things that are completely unrelated to scifi, and the only humor actually connected to the genre all comes off as bitter. There isn't anything showing a love of Star Wars or scifi, just Mel Brooks attempting to make fun of scifi fans and cram a bunch of unfunny, unrelated jokes into a movie cashing in on a trend.
