In the old lore, because exploring hyperspace lanes is dangerous as fuck and the unknown regions are full of gravity anomalies that rip probes and explorers apart.

The old lore also implies that the anomalies were artificial in nature, put there by an ancient alien race to contain things that don't belong in the galaxy out there. There were some SWRPG campaigns that had stuff like entire planets covered in sentient black goo that could eat any organic matter and control corpses like meat puppets to spread to new worlds.
