For the same reason as every storm trooper does: for military protection. Outside of battle, Kylo still enjoys the mask because he feels ugly, and the helmet enables him to be more threatening than he'd be with his satellite dishes.

I keep hoping it's a code name only and that Snoke's real name is something else. Rumor has it that he is Darth Plagueis, which I think is 90% likely.
