She's a bit of a naive goofball and a gearhead. Despite her harsh life, she clings to a strong sense of moral justice (ie treating BB8 like a person) to keep herself from falling into despair. She underplays her talents because she's terrified of success and moving forward in her life; despite how "strong" she is, she really just wants her parents to waltz in and rescue her. The movie is about Rey learning that the only thing stopping her from succeeding is herself, and that the only way to fill the emotional void left by her parents is to move forward on her own terms.
This is why she "succeeds" at everything, because her primary character flaw is that she's afraid of trying in the first place. Even then, they just barely manage to escape Jakku in the Falcon, her saving Finn from the monsters came down to luck, it took her three tries to mindtrick the stormtrooper (he was about to fuck her up), and she didn't so much beat Kylo in the duel as much as she managed to throw him off right before the planet conveniently split them apart.

Anakin was already an experienced enough podracer to draw serious attention from the local champion. It is clear that he always loved flying.
So with Anakin the unrefined Force potential was enough to turn a naturally good pilot into a great one. He still struggled with an unfamiliar fighter. At no fucking point the Force could raise a Jedi (mind you, a fully trained, highly experienced Jedi) with no aptitude or love for flying, like Obi-Wan, above mediocrity as a pilot.
Rey, after getting to the controls for the first time in her life, for all we know (and controls that always required a co-pilot before) instantly becomes better at piloting Falcon than Han Solo ever was.

However, unlike Rei, it is frequently talked about in the series that Anakin's age and desire for human pleasure disqualified him from ever becoming a jedi master, or ever going beyond a gaurdian level, despite his adept skill in the force.
