The fight in A New Hope was kind of lame because they filmed it without stunt doubles or a real choreographer, ESB and ROTJ had awesome fight scenes courtesy of based Bob Anderson.
TPM had a pretty brilliant fight scene, AoTC was kind of meh, I like the fight at the end of ROTS because they filmed it without stunt doubles which is impressive as fuck.

Technique is a bit questionable (maybe they both aren't technically good duelists), but actors actually scared in a fight is miles ahead of the rest of Hollywood. Definitely the true patrician choice of realistic choreography aficionados.
That said, Star Wars is so far from real life it's hard to really know what counts as "realistic." Precognition, telekinesis, a sword that turns on and off and cuts through anything it touches - they can't even decide how much it weighs.
Maybe Jedi martial arts ARE realistic, given that. Or maybe because they're psychic samurai wizards they never lose enough to naturally select out the parts that aren't optimally efficient.

So as the only person in the world who hasn't seen the star wars films at all. i decided that i would give them a try in the good old year of 2015.
So i started with episode 1 and was interested enough to keep watching.
But then i get to episode 4 before realizing that i was watching prequels.
I finished A new hope and didn't bother watching the other two until way later.
if it weren't for the prequels i wouldn't have given the movies a chance.

Oh they were terrible. I much preferred the lightsaber combat in TFA. They actually felt like they were knights going to battle instead of fucking choreographed ninjas.
I do all sorts of fencing and love the prequel lightsaber fighting. Without I probably wouldn't have got into fencing at all.
Is it remotely realistic; no. The only lightsaber fighting in the movies that comes close to good is Vader against Luke in the Empire Strikes Back and ONLY Vader. Luke swings predictably one side then the next in wild baseball swings in every movie. What makes me laugh the most is his footwork. Always right foot forward shuffling towards Vader like he's on a piste. Vader finishes every swing with his point online with Luke and then takes it off again because it's stage combat and that would be dangerous to fence properly.
The prequel fights are pretty unique and the style is interesting and effective in creating with stage fighting what they want to convey to the audience. That these characters are supernatural psychics who fight detached from themselves in a magical mushin. The Revenge of the Sith novelisation even describes this with Obi Wan just meditating as he lets the force guide his hand in some death ballet.
Would these techniques work in a real swordfight; ofcourse not but they look great on screen and they define the Old Republic as the height of the Jedi when they trained against eachother and were essential professional duelists.
As i say the best duel is Bespin with Vader and Luke but the second best in my opinion is Obi Wan and Maul right after Qui Gonn dies. The skill and energy here are fucking brutal and honestly it's pretty grounded in believability.
A New Hope has the most realistic lightsaber fighting in practice because they just bind and snipe at eachothers wrists which is exactly what you would do with a weapon that has no hand protection whatsoever but it's uninspired and boring and Obi Wans hilarious spin although timeless and awesome is sillier than any of the prequel shit.
There's no realism in lightsaber fighting it's all stage fighting. It's all silly and it's GREAT.

Part 2. Because word limit.
The Prequels do however have the shittest lightsaber fights but that's mostly due to the camera work and not the choreography. The face shot close ups in Attack of the Clones and when Mace Windu fights Palpatine make already abysmal fights even worse. Yoda and Palpatine should never have used lightsabers but whatever that's a nerd rage for another time. Palpatine was meant to appear way way better than any Jedi in that scene according to Behind the scenes footage but McDiarmid was so inexperienced and scared he looks on the backfoot and shit the entire time.
