A moment that still gives me the chill is when Luke is in chain and keeps telling Jabba "free my friends and you will live", everyone laugh at him and in the next minutes he rekt everyone. Maybe trite but I loved that moment when I was a kid.

I know it's overrated but I've always liked the final confrontation between Vader and Luke because of the emotion you can sense from Vader through visual cues.
I don't remember what this specific technique is called but I heard there's this cinematic move used by directors where they switch rapidly between two different shots and the audience can sense various emotions. Anyone know?
